    • Chicken: I use boneless, skinless chicken breasts for this recipe, cut into strips. You can use chicken tenderloins to skip the prep, but it's not necessary.
    • Pasta: Penne is my go-to for Bang Bang noodles with chicken because it holds plenty of sauce to ensure lots of flavor in each bite.ย  Other short pasta such as bowtie or rotini also work well.
    • Thai sweet chili sauce: This is a sweet and spicy sauce that is used to add plenty of flavor to Bang Bang sauce. I recommend Mae Ploy or a similar brand.
    • Smoked paprika: I use smoked paprika instead of regular paprika to season the chicken to give the recipe more depth. You may substitute regular paprika, but there will be a noticeable flavor difference.
    • Sriracha: Use more or less, depending on how much heat you're aiming for.
    • Butter: I divide the butter because I cook the chicken in batches; this helps the chicken brown more evenly. Unsalted butter is the better choice over salted butter, so you can have control over how salty the dish is.
    • Lime juice: This is traditional in Bang Bang dishes to add brightness and acidity. Fresh lime juice is much brighter than bottled juice.

    Step 6: Garnish and serve. Give it all a good mix, then sprinkle chopped parsley on top if desired. Serve it with this easy spinach and carrots side dish.

    • Rest the chicken: Allow the chicken some time to rest after cooking it. This helps the juices redistribute, so when you bite into the pieces, they are juicy and tender.
    • Cook the pasta al dente: Only cook the pasta until it's al dente. Overcooking it can make it mushy when tossed with the Bang Bang sauce.
    • Reserve some pasta water: I like to reserve some of water before I drain the cooked pasta. It's a great way to thin out the sauce without diluting the flavor or changing creaminess too much.

    I don't recommend it because mayo-based sauces don't freeze or thaw well. As it thaws, the sauce separates and becomes very oily.

    Ingredients
      

    • 1 pound penne noodles
    • 4 boneless skinless chicken breasts or 2 pounds, sliced into strips
    • 1 tablespoon garlic minced
    • ยฝ tablespoon smoked paprika
    • 1 teaspoon salt
    • ยฝ teaspoon pepper
    • 4 tablespoons unsalted butter divided

    Bang Bang Pasta Sauce

    • ยพ cup mayonnaise
    • ยฝ cup Sweet Thai Chili Sauce
    • 2 tablespoon Sriracha or more to taste
    • 2 tablespoons lime juice

    Instructions
     

    • Cook noodles according to package directions and drain. Set aside.
    • While the pasta is cooking, season chicken strips in a bowl with garlic, smoked paprika, salt and black pepper.
    • Working in 2 batches, melt 2 tablespoon butter in a large skillet on medium to medium-high heat. Then cook chicken for about 5 minutes a side or until cooked through. Repeat for the second batch.
    • Meanwhile, make the bang bang sauce by adding all the ingredients into a small bowl and mix well. Set aside.
    • When the chicken is cooked add pasta and sauce to the pan. Heat on low, toss until coated and serve.
