No Bake Layered Mint Cheesecake
There are so many reasons to try no bake cheesecake desserts. It's egg-free, which allows for the rich dairy flavor to come out. It also allows for the tasty flavors you add to it to stand out.
For this no bake layered mint cheesecake recipe, I'm using chocolate mint but the possibilities are endless when it comes to no bake cheesecake desserts.
Another great reason for going no baked is that it takes a lot less time to make. Perfect for hot summer days or times where you want something flavorful and fast.
With an unbaked cheesecake, the texture is light and fluffy whereas with the baked cheesecake, the texture is firmer.
This is definitely one of my favorite no bake cheesecake desserts. I have to mention that my other favorite is my recipe for The Best Chocolate Raspberry Cheesecake Parfait which is definitely worth a try too.
This no bake layered mint cheesecake can easily be made without mint at all, and left as a layered cheesecake, covered with anything and everything you can think of or nothing at all.
I love mint and frequently add it to this my no bake cheesecake desserts when I make them, but I don't always. My friend and her son were coming over and I was speaking with them both on the phone prior to their arrival.
I asked her son what he preferred I do with the peppermint cheesecakes I was going to make and he said he didn't like mint because it reminded him of toothpaste. He hated brushing his teeth and just didn't see the point.
He wanted me to keep the layers in the cheesecake just so he could eat one layer at a time and wanted another layer added. When I said I couldn't he said he understood and I was glad to hear it.
I asked him about what he wanted me to include on top and that is when the fun really started for this adorable five year old. He was so excited he could put anything on top that he needed some time to consider all of his options.
The phone was then handed back to my friend and after running around her living room for a moment or two, he quickly jumped on the couch, curled up in a comfortable looking ball, with strategically placed pillows and started to mutter to himself.
He was counting on his fingers and my friend described the serious look on his face. After all he was making a very important decision and we were trying so hard not to laugh.
After much deliberation, and a few questions just to clarify things, he decided he wanted malt balls, Kit Kat bars and Smarties. I asked if I could substitute M&Ms for the Smarties because I had some of them and he agreed that they were close enough.
He did not want sprinkles or sparkles because the Smarties, and now M&Ms, would add lots of color and malt balls were his absolute favorite in that moment.
I asked why the Kit Kat bars and he responded that his dad liked them and his mom won't let him eat as many as he wants. His dad deserved a treat too.
He continued, for that matter, that his mother doesn't let him eat as much candy as he wants either so he quickly confirmed with me that there would be lots on top of his no bake layered cheesecake and once confirmed he took off to his bedroom to get ready to come over!
At this point my friend and I burst out laughing. I don't think we could hold it in any longer. Her son is just amazing. I can't wait to see him as an adult. I think I know what he will be like but I really hope I get to see for myself!
Oreo Mint Cheesecake
I chose to use mint flavored Oreos for this recipe video but with this cheesecake recipe there are truly so many options, depending on your favorites. Feel free to swap this cookie out and create mint Aero cheesecake instead, or whatever!
I switch the topping around every time I make this no bake layered mint cheesecake so I figured you should have the same options too! They all work beautifully, require the same amount of effort and all are delicious in their own way.
Here is another suggestion when considering what chocolate mint treat to top your no bake cheesecake desserts with. Use more than one. Doesn't Oreo and mint Aero cheesecake sound amazing?
Yes, I am suggesting to combine mint flavored Oreos with After Eight Mints or use a blend or mint Aero Bars and Andes Mints. You get the idea and I guarantee you will not be disappointed with the results either. After all, how could you be?
The most important thing you must do is have your preferred topping ready and chopped so that as soon as the cheesecake batter is poured you can sprinkle everything you want to include on top before your cheesecake sets.
It won't set so fast that you won't have the opportunity to add what you want I just find the sooner the topping is added the better.
Mint Aero Cheesecake
To make mint aero cheesecake just chop up mint Aeros to add a beautiful flavor and color. Mint Aero cheesecake is delicious! So, like I said before, to switch things up instead of chopping up mint Oreo cookies, you chop up around one cup of mint Aero chocolate bars and sprinkle all over the top of your cake.
You can use more or less of the chopped chocolate bars, the recommended 1 cup is only a suggestion or guide to give you an idea of how much you will need to cover the top surface of your cheesecake.
After Eight Mint Cheesecake Recipe
You'll love this After Eight mint cheesecake recipe. After Eights are so easy to chop up and decorate the top of this terrific cheesecake as well. Anything mint and chocolate based will work and work well to give you an amazing result.

Peppermint Cheesecake Recipe
Sometimes I just can't help myself with the combination of chocolate and mint. I know I have cookies, cupcakes and more on this blog and I have made a list down below, above the recipe card, if you are interested in checking any of them out.
You know I am going to tell you that I love and enjoy them all but I wouldn't have published them on this blog if I didn't!
Peppermint Cheesecake
I have to share some options you have when making this amazing no bake peppermint cheesecake. This will prove to you that this is a recipe you will have to keep!
All Mint Cheesecake
At one time I used to add mint to the entire peppermint cheesecake and you can definitely do that if you want to. Simply add one teaspoon of mint extract to the second layer, instead of just one teaspoon to the dark chocolate colored half, as recommended in this recipe.
One Layer
I also used to make the cake just one color, honestly, usually the color of cocoa and I added melted chocolate to the entire cake, usually about one cup, if not a little more, just because I can't help myself.
Fold in Treats
I also have included treats or candies inside the cake itself. The Oreo mint cookies, cream filled cookies or cookies of any kind, I found couldn't handle the moisture being inside the cake itself and became a little soggy. Everything else works GREAT!
Alternating between chopped Andes Mints, After Eights and Aero mint chocolate pieces, gently folded in to the cream cheese mixture if I was going for a chocolate mint kind of dessert.
Otherwise, I would skip the mint and add whatever I wanted to the creamy cheesy mixture. Everything from chopped chocolate peanut butter cups, to chocolate covered caramels to chopped chocolate bars of all kinds, inside and on top.
Throw Moderation Out the Window With No Bake Cheesecake Desserts (just this once!)
Usually total excess is frowned upon, but with no bake cheesecake desserts it's decadent glory! Just know that you can have your fun with this incredible dessert. Hopefully as much as I do...just this once.
Choosing the Perfect Cheesecake Base
For the base or crust of the cheesecake, I have listed options that you may choose from, individually or in combination. They each add a different flavor and texture if you want to switch it up a bit and I urge you to try the Biscoff cookies as a crust at least once.
I wish I knew who suggested Biscoff Cookies as a base for a cheesecake crust because I had no idea what I was missing.
Cornflake crumbs will work but I have found the base gets harder than necessary whenever I have used them. That being said I have used them on more than one occasion in a pinch.
Biscoff Cookies Family Pack (Pack of 2)
Digestive Biscuits 3 Pack, Original
I am including the recipe for a full nine-inch crust as well because I get asked about it all of the time.
Oreo, Graham Cracker, Corn Flake Crumbs or Digestive Biscuits
Here is the basic crust recipe you can follow if using digestive biscuits, or another kind of crumb, to make these Mini Easter Cheesecakes.
½ package (8.8 oz or 250 grams) or 11 or 12 Digestive Biscuits, crushed, or about 1 generous cup.
Use 1 cup biscuits or crumbs and ¼ cup butter.
Grind or smash your biscuits into crumbs if necessary, melt your butter, and combine.
You want the mixture hold together when pressed so all of your crumbs must look moist.
Press crumb mixture into each hole in your pan.
Now you must decide whether you want to bake your base or not. Baking tends to cause your base to hold together a bit better.
Refrigerate for at least 60 minutes to set crust.
OR
Preheat your oven to 350 degrees.
Bake for between five and six minutes. Allow to totally cool before adding cheesecake layer.
Full Size Nine-Inch Crust
1 package (8.8 oz or 250 grams) or 23 Digestive Biscuits, crushed, about 2 generous cups.
½ cup salted butter, melted.
Combine crushed biscuits or crumbs with salted butter. I start to add about ⅓ of a cup of butter and blend them both together until all crumbs are damp.
Press into your pan.
Bake on 350 degrees for 8-9 minutes or don't.
You don't have to bake your crust. It is enough to leave it in your fridge to set for at least an hour.
If you bake it, make sure to allow crust to totally cool before adding your cheesecake layer.
Baking your crust may make it hold together somewhat better.
Biscoff Cookies or Speculoos
Here is the basic crust recipe you can follow if using Biscoff Cookies to make these peppermint cheesecakes.
½ package (8.8 oz or 250 grams) or 15 Biscoff Cookies, crushed, about 1 generous cup.
3 tablespoons salted butter, melted.
Combine crushed cookies with salted butter.
Press into each hole in your muffin pan.
If you are not baking the crust allow it to set in your fridge for at last 30 minutes.
OR
Bake on 350 degrees for 5 minutes. Allow to totally cool before adding your cheesecake layer.
Full Size 9 inch Crust
1 package (8.8 oz.) or 30 Biscoff cookies, crushed, about 2 generous cups (I am always happy to eat a couple of these cookies).
⅓ cup salted butter, melted.
Combine crushed cookies with salted butter. I start to add about ⅓ of a cup of butter and blend them both together until crumbs are damp. You can use up to ½ cup of butter for your crust if needed.
Press into pan.
Bake on 350 degrees for 8-9 minutes or don't.

The Cheese Filling or Layer
There are a few options you have when it comes to making the cheese layer of the cheesecake. Each have unique qualities and flavors and just a note, you need to spend some money on them and buy the good stuff, otherwise the quality of the cake can be compromised.
Don't hesitate to try and throw a little piece of another kind of cheese in the mix just to switch things up a bit!
Cream Cheese (aka Soft White Cheese)
Cream cheese is the classic one used in cheesecake. There are cheap brands out there but they will affect the quality of the cake. The one I recommend to use is Philadelphia cream cheese.
I find it's the smoothest and silkiest out there (in my humble opinion) and I don't get paid for saying that!
Ricotta
Ricotta is light and mild and milky and makes a wonderful substitution for the cream cheese. It won't be as smooth as when made with cream cheese but the taste is out of this world. You can also add some to the cream cheese if you want to lighten it up a bit and change the flavor in a good way.
Marscapone
Marscapone is a kind of salty, feta like creamy cheese. It's rich and smooth and silky and just tastes wonderful. Unfortunately it's not the best to use in large amounts because it makes the filling too dense. If added in small amounts with the cream cheese it can make a more delicious cake.
Feta
Feta may taste great in small amounts but again, it is not best to use large amounts in the cake. It can cause the filling to become slightly grainy and lose its smooth texture. Add a small amount to the cream cheese mixture if you want to switch it up a little and the result will surprise you!
No Bake Layered Mint Cheesecake Toppings
Toppings for your cheesecake can come from a variety of sources. Besides all the mint toppings, here are a few other selections:
- chocolate chips, either white or milk
- chopped up chocolate bars
- chopped nuts (walnuts, pecans, almonds etc.)
- Smarties
- M&Ms
- Reese"s Pieces
- fruit (berries, peaches, apples etc.) fresh, frozen or dried
- sprinkles or sparkles
- gummy bears (great for kids!)
- raisins
The list goes on, the options are only limited to your imagination. Feel free to have fun and experiment.
*NOTE* you can use most of the same toppings in the cream cheese filling, just fold them in gently (use only the dried fruit because fresh or frozen fruit will bleed into the cake).
Chilling Your No Bake Layered Mint Cheesecake
Even though you don't need an oven to make a no bake cheesecake, you do need a refrigerator to chill the cake in before serving.
If your cake is not cold enough, it will still be edible but not totally firm and the crust will crumble slightly as you eat it.
If you chill the cake for at least six hours, if not overnight, your cheesecake will be firm, ready to cut, completely set, much easier to slice and so much prettier.
No Bake White Chocolate Peppermint Cheesecake
Growing up I loved all things sweet...especially cheesecakes. While I liked the Sara Lee version, I always had a preference for chocolate mint, especially peppermint cheesecake, as if you haven't realized already.
Mint brownies were my thing too. Anything chocolate mint for that matter, and if I think about it hard, anything with sugar to be honest. I'm sure most parents can relate to that, or at least I hope so.
Getting back to cheesecake, one of my favorite versions was, and still is, with white chocolate. I would add red and green coloring around the winter holidays, red for Valentine's Day and green for St. Patrick's Day. The white chocolate allowed me to create whatever color I wanted.
Or, when it's not a holiday or special occasion, I sometimes just leave it plain and enjoy it and all its deliciousness!
Chocolate Peppermint Cheesecake Recipe
So now I'm going to go on again about peppermint cheesecakes, mint Aero cheesecakes, Andes mint desserts and no bake cheesecake desserts and all the wonderful things you can do with them.
It doesn't really matter what you call them, what's more important is how they taste and how many people you can make happy with them. No bake cheesecake desserts are usually excitedly received, in my experience, when brought to functions of sorts.
My son Patrick used to bring in the Mint Aero Cheesecake to school on the last day of the year. It was the perfect dessert at the time because the weather was starting to get warm and I didn't want to use my oven. It was a tasty little peppermint cheesecake that all the kids loved.
At church, the gals would often request my Andes Mint Desserts and I was happy to oblige. I love to make these layered (0r not) delicious cheesecakes and I love to see the smiles on people's faces when the taste them.
The people at my old job also used to like my mint Aero cheesecake. I guess there's something about an Aero bar that just makes them taste out of this world. Perhaps it's the bubbles, I hadn't given it much thought until now.

Ingredients in No Bake Layered Mint Cheesecake
- crumbs of your choice
- melted butter
- cream cheese
- powdered or icing sugar
- sour cream
- heavy or whipping cream
- cocoa powder
- mint extract (optional)
- melted chocolate chips
- chopped Oreo mint cookies, Aero mint chocolate, Andes Mints, or After Eights
- sprinkles or sparkles (if desired)
How to make No Bake Layered Mint Cheesecake
Stir together graham crumbs and melted butter, and press evenly into a parchment lined springform pan (I used an 8-inch pan) sprayed with nonstick cooking spray.
I used to use an extra ¼ cup of butter to make this crust and lately I have been trying to cut back a little here and there, where I can and I find I can with this crust.
If you prefer a softer, very moist crust, use the extra quarter cup of melted butter otherwise just use ⅓ of a cup.
Set aside in your fridge for at least 30 minutes.
Beat cream cheese, sour cream, powdered sugar, and heavy cream until smooth. Divide in half.
In one half, beat in cocoa powder, mint extract, and melted chocolate chips until smooth. Spread over your crust, then follow with the other half of your cheesecake mixture.
Leave out the mint in the second half unless you want the full mint experience, in which case, add 1 teaspoon to it.
Top with chopped Oreo mint cookies, Aero mint chocolate, Andes Mints, or After Eights and sprinkles or sparkles, then refrigerate overnight before serving.
Enjoy every bite!
Tips for the Best No Bake Layered Mint Cheesecake
- Make sure your cream cheese is room temperature before using. Take it out of the fridge at least one hour before you need it. If in a pinch then cut the cheese into cubes and leave them on the counter.
- Chill the cheesecake for at least six hours (preferably overnight) before serving. If in a hurry, put the cheesecake in the freezer for ½ hour to help set.
- Use a hand mixer to beat the cream cheese mixture.
- Make sure the sour cream and the heavy or whipping cream are cold...straight from the fridge.
- Chill the crumb crust for at least 10 minutes before adding the filling.
- Taste the filling before adding it to ensure it's the way you want it
Best Make Ahead No Bake Cheesecake Desserts
No matter what you make, whether it be a mint Aero cheesecake, a peppermint cheesecake or Andes mint dessert, all can be made ahead of time. Because you have to chill the no bake cheesecake desserts, they're perfect to make before you need them.
My friend Bernice used to come over every week for my delicious no bake cheesecake desserts and I was happy to make them for her. Because of my busy schedule, I would make them a few days in advance so we could just sit back and chat about our week.
I miss those days sometimes. As I get older, I'm not able to eat as many sweets as I used to. Bernice, however, still comes over on a regular basis to check in and talk.
How do you store No Bake Layered Mint Cheesecake
If it’s well covered and stored in an airtight container in a refrigerator, a peppermint cheesecake will stay fresh for 4 to 5 days. So will a mint Aero cheesecake or Andes mint dessert or any other variation you may make!
Can You Freeze No Bake Cheesecake Desserts
If you wrap the mint Aero cheesecake, the peppermint cheesecake or the Andes mint dessert tightly in plastic wrap in an airtight container and freeze it, it should keep well for 2 to 3 months.

Ingredients

- ⅓ cup melted butter can add up to ¼ cup more
- 2 bricks (8 oz) cream cheese, softened
- 1 ½ cups icing or powdered sugar
- ⅓ cup sour cream
- ½ cup heavy or whipping cream
- ¼ cup cocoa powder
- 1 teaspoon mint extract
- ½ cup melted chocolate chips
Decorations
- 1 cup chopped Oreo mint cookies, Aero mint chocolate, Andes Mints, or After Eights
- sprinkles
Instructions
- Get out and measure your ingredients.
- Stir together graham crumbs and melted butter, and press evenly into a parchment lined springform pan sprayed with cooking spray. (I used an 8-inch pan) Set aside in your fridge for at least 30 minutes.
- Beat cream cheese, sour cream, powdered sugar, and heavy cream until smooth. Divide in half.
- In one half, using medium to medium high speed, beat in cocoa powder, mint extract, and melted chocolate chips.
- Beat until smooth.
- Spread over your crust.
- Repeat with the other half of your cheesecake mixture. (leaving out the mint extract, if you want to add it then add another teaspoon to your mixture)
- Top with chopped Oreo mint cookies, Aero mint chocolate, Andes Mints, or After Eights and sprinkles or sparkles, then refrigerate overnight before serving.
- Remove outer edge of cheesecake.
- Slice, serve and enjoy!
- Be careful if you are adding candies or treats to each layer. If you add too many you may have some difficulties slicing your cheesecake in a neat manner.
