Heirloom Tomato Galette is a rustic recipe that is a pie crust, topped with cheese and fresh heirloom tomatoes. This recipe is just like Grandma used to make.
I remember when I was growing up and our family had breakfast at my Grandmother's house every Saturday morning. One of my favorite breakfast items was Grandma's Heirloom Tomato Galette.
Chunks of cheese melted all over bubbling heirloom tomato filling, and a flaky, buttery crust made it taste divine! Originally she used regular red tomatoes but her galette became magical once she began using heirloom tomatoes and adding balsamic vinegar.
I used to make this for brunch with my family every now and then when we would visit. But, somehow I just lost that routine of making this delicious recipe as often as it deserves.
The other day, I was sorting through my handwritten recipes and came across this recipe in my grandmother's handwriting. It brought back so many fond memories of my childhood. So, today I decided to give it another go and share it with you.
