Garlic Butter Steak Bites and Potatoes
This was inspired by my other buttery steak recipe and my Crock Pot Steak Bites on this site and pairs well with this amazing mac and cheese recipe.
Ingredients
This recipe only uses simple ingredients to deliver big flavor.
- Sirloin steak
- Extra virgin olive oil - divided
- Garlic powder
- Coriander seed
- Minced onion
- Sea salt
- Pepper
- Red pepper flakes
- Ancho chili powder
- Quartered baby potatoes
- Sliced onion
- Rosemary
- Minced garlic
- Thyme
- Soy sauce

Instructions
It only takes a few simple steps to make this easy, delicious recipe.
Step 1: Prep
Let the steak come to room temperature while prepping the rest of the ingredients.
Combine garlic powder, coriander, minced onion, salt, pepper, red pepper flakes, and ancho chili powder in a small bowl, then divide the mixture into two bowls.
Then, roughly chop the parsley, rosemary, and garlic. Combine them and then divide the mixture into two bowls.
Finally, slice the onions ¼-inch thick.
Step 2: Prepare the Steak
Brush the steaks with a tablespoon of olive oil and season with one of the bowls of seasoning. Then, cut the steaks into 1-inch cubes. Add them to a large mixing bowl and toss with half the parsley, rosemary, and garlic mixture.
Step 3: Prepare the Potatoes
Cut the baby potatoes into quarters and add them to a large mixing bowl with the onions. Add olive oil and the remaining parsley, rosemary, and garlic and the remaining half of the seasonings. Toss to coat.
Step 4: Cook the Potatoes
Heat a frying pan over medium-high heat. Then add 1 tablespoon of olive oil to the pan along with the bowl of potatoes, onions, and seasonings. Top with one sprig of thyme and 3 tablespoons of butter cut into slices, then, cook for 10 minutes, stirring frequently.
Step 5: Cook the Steak
Push the potatoes and onions to the outside edge of the pan and add the steak to the center of the pan. Cook the steak for about two minutes per side, then stir to combine.
Step 6: Simmer
Reduce the heat to a simmer and add the remaining butter slices, soy sauce, and thyme. Cover and cook for five minutes. Enjoy!
Hint: Always bring your steak to room temperature for even cooking.

- ½ cup extra virgin olive oil divided
- ½ teaspoon garlic powder
- ½ teaspoon coriander seed
- ½ teaspoon minced onion
- 1 teaspoon sea salt
- 1 teaspoon pepper
- ¼ teaspoon red pepper flakes
- ¼ teaspoon ancho chili powder
- 1 ½ lbs baby potatoes cut in quarters
- 1 yellow onion sliced
- 3 sprigs rosemary
- 6 cloves garlic minced
- 3 sprigs thyme
- ¼ cup soy sauce
Instructions
- Get out and measure your ingredients.
- Allow steak to come to room temp before cooking. (About 20 minutes)
- Preheat a frying pan over medium high heat.
- Combine garlic powder, coriander, minced onion, salt, pepper, red pepper flakes, and ancho chili powder in a small bowl or ramekin. Divide into 2 bowls.
- Slice the onions to ¼” thick.
- Roughly chop the parsley, rosemary, and garlic. Combine, then divide in half.
- Brush each steak with 1 tablespoon of olive oil and season with 1 bowl of the seasoning.
- Cut into 1” cubes. Add to a large mixing bowl and toss with ½ the parsley, rosemary, and garlic.
- Add 1 tablespoon of olive oil to the hot pan and swirl to coat.
- Cut the potatoes into quarters and add to a large mixing bowl.
- Toss with remaining olive oil, onions, parsley, rosemary, garlic, and remaining half of the seasoning.
- Stir until blended.
- Add the bowl of potatoes and onions to the pan and top with 1 sprig of thyme and 3 tablespoon of butter, cut into slices. Cook for 10 minutes, stirring often.
- Push potatoes and onions to the sides of the pan leaving an empty circle in the center. Add the steak to the center and cook for 2 minutes per side. Stir to combine.
- Lower the heat to a simmer. Add the remaining butter slices, soy sauce, and thyme.
- Cover and cook for 5 minutes.
- Serve.
