Slow Cooker Pulled Chicken Tacos are so easy and only a few ingredients! A great weekday meal served in a soft tortilla or taco shell, as a sandwich, on a salad or even rice and totally delicious.
The other day we were planning a impromptu party that we wanted to host. I was trying to think through all of my recipes and come up with something everyone would love. This recipe for Slow Cooker Pulled Chicken Tacos popped into my head! It is quick, easy, and delicious. Perfect party food! I also considered making our Slow Cooker Pulled Beef Tacos or Our Favorite Slow Cooker Pulled Pork but I only had chicken defrosted!
We have enjoyed this recipe many times at our family dinner table. I love that the slow cooker does most of the work! It only takes a few minutes of prep before you dump it into the slow cooker. Slow cookers are such time savers. I love to come home after a long day at work and know that dinner is minutes away from being on the table.

You can easily double or triple the recipe to feed a crowd. The chicken can be cooking away while you prepare other things for the party! I also love that each guest can go through the serving line and make the perfect taco for themselves!

Slow Cooker Pulled Chicken Tacos
- 1 pound chicken breasts or chicken thighs, boneless, skinless - 4
- 2 cups chunky salsa
- 3 tblsp taco seasoning, or 1 package
- 2 cups peppers, green, yellow, orange or red, sliced
- 8 soft flour tortillas
- cheese, shredded
- sour cream
- avacados, sliced or diced or guacamole
- jalapeno pepper, chopped or diced
- green onion. thinly sliced
Spray bottom of slow cooker with cooking spray.
Put chicken into slow cooker and sprinkle as evenly as possible with taco seasoning.
Pour 1 1/2 cups of salsa on top of the chicken.
Cook covered on low for 6-7 hours or high 3-3 1/2.
Remove cooked chicken from your slow cooker.
Add your peppers to your slow cooker.
Shred your chicken breasts with 2 forks.
Return shredded chicken to your slow cooker.
Stir and cook covered on high for about 10 minutes or heated through.
Spoon about 2/3 of a cup of the chicken mixture down the center of each tortilla and add your additional preferred toppings.
Fold bottom end of tortilla over filling, fold in sides, leaving top end open. Secure with a toothpick if necessary.
