Cake
- Preheat your oven to 325 F, line a 9-inch cake pan or spring form pan with parchment paper and spray with baking spray.
- In a medium mixing bowl whisk together the flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt.
- In a large mixing bowl, use a hand mixer to mix together the pumpkin, brown sugar, olive oil, sugar, honey, eggs and vanilla extract until well combined. At least 2-3 minutes of mixing. Add the dry ingredients and stir together with a wooden spoon until just combined and no dry streaks remain.
- Pour the batter into the prepared pan and level the top. Bake for about 60-70 minutes or until an inserted toothpick into the middle of the cake comes out clean. Remove from the oven and let cool in the pan on a wire cooling rack for about 10 minutes. Run a knife around the pan (or gently open the spring form pan) and remove from the pan and let it finish cooling on the wire cooling rack for 60-90 minutes, or until completely room temperature before frosting.
