It seems I am always looking for new things to do with zucchini! In an attempt to find new zucchini recipes I stumbled on to one similar to this.
I had to give it a try and then realized just how easy these zucchini pizza bites were to make. Then, when devouring them we realized what an incredible snack they were to eat!
Everyone just loved them. I mean, who can resist anything, even zucchini, with pasta sauce, cheese and pepperoni? I haven't met anyone who can yet!
I can never seem to make enough of these delicious zucchini pizza rounds either! They disappear so fast!
I have made them as a snack for movie night or as an appetizer when we have company over. I always end up with so many zucchinis from my garden and I have to be creative to make sure nothing goes to waste!

Zucchini Pepperoni Pizza
The little oven baked zucchini pizza rounds taste exactly like little pizzas. I usually try and use pepperoni but any cooked mea will definitely work.
I have used chopped or sliced bacon and sausage.
With bacon I just cut off a slice that is a little larger than my zucchini slices because as you know bacon shrinks as it cooks. As you might expect, the bacon tastes wonderful too.
If I am using sausages I buy the large sausages and cook them in the oven or skillet, usually they are so easy to fry. Then I slice them and brown each side.
After each side is browned a little I place one on top of each cheese covered zucchini slice, instead of the pepperoni. We have used Italian and honey garlic sausages and both tasted terrific.
Just throwing out some ideas for you to consider trying. I always figure the more options the better!
Oven Baked Zucchini Pizza Bites
These zucchini pizza bites are delicious, right out of the oven, after they have been under the broiler for a minute or two. No matter which toppings you add, the broiler always adds a nice color.
My husband always broils these longer than I do! He loves the pepperoni on these Easy Zucchini Pizza Bites to be more well done so you will just have to broil them until the pepperoni, bacon or sausage is done just the way you like them!

These super simple pizza rounds are so inexpensive to make that my husband calls them thrifty or frugal snacks. Even though we grow zucchinis, they are still cheap to purchase, all things considered.
My husband loves to save money and after all these years he has been rubbing off on me, slowly but surely. He would be so happy to hear that.
After all these years even I see the changes in myself. He brings balance in my life and without him I would likely live in a lot more debt, just like I did before him.
Unnecessary purchases filling my credit cards. I used to be terrible but now I am so different I actually impress myself. I have self control and I actually ask myself if I really need something before I buy it.

Keto Low Carb Zucchini Recipe
These easy low carb zucchini pizza bites are amazing because they are healthy too, all things considered. My friend, who has been keto for years loves these and our Easy Zucchini Pizza Boats.
She eats them as she likes them and switches up her toppings all of the time.
In our house we are eating less and less bread. These little bites are perfect for any time. My husband and I eat these while watching a movie even.

Easy Zucchini Pizza Bites Video
Zucchini Pizza Bites
Equipment
Ingredients
- 1-3 tablespoons olive oil
- 2-3 medium zucchinis, cut into ¼ inch slices
- salt and pepper to taste
- ½ cup pizza sauce or marinara sauce
- 1 cup mozzarella cheese, shredded
- 20 slices pepperoni, sliced, mini or regular, approximately
- 1 tablespoon oregano or Italian seasoning
Instructions
- In a medium sized bowl toss zucchini slices in olive oil. Sprinkle with salt and pepper. Toss and sprinkle with more salt and pepper.
- Broil or sauté the zucchini slices until just tender, about 2 minutes per side.
- Preheat your oven to broil. Prepare a baking sheet with tinfoil and cooking spray. Place tender zucchini slices on your prepared baking sheet, as evenly spaced apart as possible.
- Top each slice with sauce, a pinch of oregano or italian seasoning if desired, cheese and then a pepperoni slice.
- Broil until the cheese has melted and the pepperoni is browned, just a few minutes. Serve immediately. Enjoy!

Can you substitute eggplant for zucchini?

What a great idea! I never considered eggplant as an option, frankly it never occurred to me, but I really think it could work. I would preheat oven to 425 degrees. Cut your eggplant into 1/4 inch thick slices. Arrange slices in a single layer, spaced apart, on a greased baking sheet. Brush side with olive oil and sprinkle with salt and pepper. Flip over each piece and repeat. Bake until lightly browned. Turning once at the halfway mark for about 25 minutes. Turn the oven up to broil. Brush on sauce and pile cheese and pepperoni (or whichever toppings you choose) until Cheese is melted. I think they will taste delicious and I’m going to try that myself!
