How to Cook a Flat Pork Chop in a Pan
All you have to do is cut slices into the side of each pork chop on the edge with the fat and silver skin.
Make your cuts every 1 ½ to 2 inches along that edge and the cuts should be no more than ½ an inch deep.
That is it! You will now have a flat, cooked pork chop!
Cast Iron Skillet Boneless Pork Chops Recipe
I used to love using my cast iron skillet to make this amazing recipe but these days frankly I prefer a lighter, less heavy option!
Luckily, these boneless or bone in pork chops will still taste just as good without my old faithful cast iron skillet.
I actually just bought a new cast iron skillet that is so much lighter than my old cast iron skillet and just love it. If you’re ever out and about, I urge you to check one out.
The are so much easier to care for and again, so much lighter. I wish I bought one sooner!
Grill Pan Pork Chops
A grill pan is also a great idea to use to make these easy pork chop skillet dinner. That way you can end up with lines on your pork chops so they look cooked outside on a grill.

- pork chops, loin or center cut, boneless or bone in
- sugar
- salt
- pepper
- oil
How to Fry Pork Chops
Wash and cut slices into the side of each pork chop with the fat and silver skin along the edge. This stops the pork chops from curling.
Make cuts every 1 ½ to 2 inches along that edge. The cuts should be no more than ½ an inch deep.
Dry pork chops with paper towels and sprinkle both sides with salt and pepper.

In a large skillet, with a lid, over medium to medium high heat, heat oil until it shimmers or a drop of water flicked in it dances.
Sprinkle the first side of each pork chop with salt, pepper and a then ¼ teaspoon of sugar.
Press into pork chop.
Next, gently place pork chop in skillet, sugar side down.
Repeat with remaining pork chops.
Sprinkle salt and pepper on the tops of all the pork chops once in the skillet.

Cover and cook until the center of each pork chop is cooked and a beautiful golden brown color.
Use a thermometer to check that pork chops have reached an internal temperature of 140 degrees. Usually cook time is between 3 and 7 minutes.
Remove each cooked pork chop and allow to rest for a few minutes before serving.
The sugar side will be a darker color.
Serve immediately with applesauce if desired and enjoy!
