It doesn't get much easier than that. If you do any amount of cooking at all, you'll probably already have most of these ingredients on hand already. You may or may not have heavy whipping cream in your fridge, depending on how much you use it, but it's always available in your dairy section. We use blueberries and raspberries most frequently with this dessert because I seem to have an endless supply every summer. We've also used blackberries and strawberries, too, with amazing results. I try to use fresh berries with this berry whipped cream dessert, and any heavy whipping cream desserts that use fruit for that matter, but in a pinch, frozen berries will work, as well. You just have to watch the amount of water you add and allow the berries to simmer a bit longer.

If your sauce is too thin, make a quick slurry of 1 tablespoon of cornstarch and 2 tablespoons of cool water and add it to your sauce while it simmers.

You cannot freeze the whipped cream part of this recipe. Freezing and thawing causes separation, and it's just not good.
Reheat:

- 2 cups fresh blueberries, raspberries or both, washed and picked over, or 1 pint
- 1 teaspoon lemon juice
- 1 tablespoon sugar or to taste
- ¾ cup heavy cream
- 2 tablespoons powdered or icing sugar
- 1 teaspoon vanilla extract

- 1 tablespoon cornstarch

Instructions
- Get out and measure all of your ingredients.
- In a small saucepan, combine blueberries, lemon juice, granulated sugar, and 2 tablespoons water.
- Combine cornstarch and water. Stir until dissolved and add to berry mixture, if desired.
- Cook over medium heat, stirring frequently, until blueberries begin to break down and juices boil and thicken, about 5 minutes.
- Remove from heat, and transfer to a small bowl. Place bowl in a larger bowl of ice water, and stir mixture occasionally until cold.
- In a separate bowl, combine cream, confectioners' sugar, and vanilla.
- Beat until stiff peaks form.
- Fold in ⅓ cup of the blueberry sauce.
- Carefully stir until blended.
- Divide among 4 dessert dishes, and spoon remaining sauce over tops.
