These bars could not be easier to make.
Line an 8x8 pan with parchment paper to leave at least 2 sides long to make it easy to remove later. Whisk together all-purpose flour and baking powder and set aside.
Cream together softened butter and sugar in a stand mixer for about 5 minutes on low, with either the paddle attachment or dough hook.
Pour in lightly beaten eggs, just enough to break the yolks, and vanilla and run the machine on low for 1 minute.
Add in dry ingredients and run again for about 2 minutes to thoroughly mix.
Add in chopped kit kat bars and mix with a spoon or spatula. Mixing in half at a time will help to make sure they are evenly distributed.
The dough will be sticky. Drop dollops around the prepared 8x8 pan and use an offset spatula or the back of a spoon to smooth out.
Bake for 50-55 minutes, or until a toothpick comes up clean but with some moist crumbs from the center of the pan.
Cool on a wire rack fully before taking cookies out of the pan.
