Pull out and measure all the ingredients.
Cut potatoes into 1-½ inch chunks or use mini/little potatoes. Bring a pot of salted water to a boil and add potatoes. Reduce heat to medium and cook for 10-13 minutes, or until tender. Exact timing will depend on the type and size of the potatoes.
Preheat oven to 400 degrees. Spray a 13 x 9 pan or dish with cooking spray. Set aside.
If using, chop and cook bacon according to package directions. I like mind crispy. Drain on paper towel and set aside.
Once potatoes are almost cooked. Drain.
Pour the ranch dressing in a measuring cup and add garlic and onion flakes. Stir to combine. Set aside.
Using a fork, press down on each potato to slightly break open and flatten.
Place potatoes inside prepared dish or pan.
Pour the Ranch dressing over the potatoes and spread out as evenly as possible.
Top it with bacon.
Sprinkle the top with green onions.
Do the same with Parmesan cheese, followed by shredded cheddar.
Bake uncovered for 20-25 minutes, until the biggest potatoes easily pierce with a fork. Remove pan from oven and set oven temperature to broil, if desired.
Return pan to the oven and broil for a few minutes, until cheese starts to brown. Again, if desired.
