Curried Beef, Lentils and Vegetables is the perfect weeknight dinner. You can use vegetables you have on hand to make this simple and delicious dish.
This is a sponsored post.  I have to tell you that even though this is a recipe we have enjoyed for years!  It is so nice to be compensated for doing a post we would have done for free!

We are so excited at the possibility of a partnership with Canadian Lentils and Half Your Plate.  We have decided to be healthier in 2017 and that includes eating more lentils and including the half your plate philosophy into our daily lives.

They want to show us how easy it is to incorporate fruits and veggies into every meal.  Half Your Plate provides tips, tricks, and loads of recipes!

All you have to do is the cooking! Their mandate is to help Canadians find easy, budget-friendly ways to fill half of their plate with fruits and veggies at every meal!

We are here to help them to spread the word to all Canadians about the role fruits and veggies play in a healthy lifestyle.  You have to check their site out!

Now Canadian Lentils also have a fabulous, user friendly website.  Perfect to find lots of recipes and lots of information!   Everything you need to know about this amazing little plant based protein can be found on their site, lentils.ca.

We use lentils regularly, have many delicious recipes that require lentils and enjoy cooking with them.  Their health benefits are an added bonus.

We are surrounded by picky eaters and we always chuckle because most of the time they have no idea they are eating lentils at all.

We keep lentils that are cooked, in the refrigerator, just so they are ready to add to cookies, cakes, curries, casseroles, dips, soups, salads, or anything we desire!

We also keep canned lentils in the cupboard as well, just in case they are needed in a pinch!  That being said depending on the lentil you are using cooking time is the same or better as rice!  Rinse and simmer.  That is it.  Lentils do not even need to soak!

I hate to admit this but for the first few years I cooked lentils only after soaking them!  I was so happy to hear soaking was not needed! Believe me.  We love lentils for their versatility.

Most don’t realize that you can and should be including lentils with everything possible. The fact that lentils are a plant based protein is so important to a healthier diet and why not especially if no one notices? That being said, below is a recipe that you, and your family, will love.

How to make Curried Beef, Lentils and Vegetables

Preheat your oven to 350 degrees.

Place a casserole dish or roasting pan, with a lid, beside your work station that is large enough to hold all of your meat, vegetables and liquid.

In a large skillet, over medium to medium-high heat, pour oil and wait until it shimmers or a drop of water flicked in it dances!

In a small bowl combine thyme, salt, pepper and curry powder. Set aside.

Cut your beef into chunks and toss to make sure meat is coated in spice mixture.

Cook your beef in your skillet until brown, just a few minutes depending on the size of your chunks!

Add broth, lentils and coconut milk to your skillet and heat until boiling.

Dump contents of your boiling skillet into your casserole dish or roasting pan, cover and place in the oven for 20-30 minutes or until lentils are tender.

Stir lentils at least once while baking.

No need to wipe your skillet.

Add more oil to your skillet and heat it up!

Add onions, cauliflower, broccoli, celery and carrots and stir until tender.

Sprinkle 1 teaspoon curry powder, garlic powder, pepper and cumin on top of the vegetables.

Continue to stir until vegetables start to brown.

    Remove from heat.

Once lentils are cooked add vegetables to casserole dish or roasting pan. Stir to combine.

Taste the dish and decide if it needs any salt and pepper.

    Add lemon juice, if using.

Bake for 10 more minutes if desired.

    Serve and enjoy!
