Chicken
- 2 chicken breasts boneless skinless, butterflied to make 4 thinner chicken breasts
- 1 cup mozzarella cheese freshly grated
- 1 ¼ cups full fat sour cream
- ½ cup parmesan cheese freshly grated
- Fresh chopped parsley for garnish, optional
Preheat the oven to 375 F and spray a 9x13 baking dish with cooking spray.
Mix all the seasonings together in a small bowl. Season both sides of the chicken with half of the seasoning mixture (3 ¼ teaspoons) and add the other half to a medium mixing bowl.
Lay the chicken in the baking dish in a single layer. Sprinkle the mozzarella cheese over top of all the chicken equally.
To the medium mixing bowl add the sour cream and parmesan cheese. Stir until blended.
Spread the mixture over top of the mozzarella cheese on the chicken.
Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes or until the chicken reaches 165 F at its thickest point.
Remove from the oven and let sit for 10 minutes before serving. Sprinkle with parsley, if desired, and serve with a green veggie and bread.
