Peeled and cut root/tops of onions off
Place onions on a piece of foil and drizzle with one tablespoon of olive oil.
Sprinkle with salt and pepper.
Add the onions to the smoker.
Smoke for 1 hour on medium (225 degrees).
Enclose in the foil and cook for about 2 hours until the onions are softened.
