Ingredients

  • 1 lb asparagus trimmed
  • 2 tablespoons capers
  • 1 tablespoon olive oil
  • 3 cloves fresh garlic minced
  • 4 tablespoon butter cut into tiny cubes
  • kosher salt to taste
  • fresh ground black pepper to taste
  • 1 teaspoon lemon juice fresh squeezed

Instructions

  • Get out and measure your ingredients.
  • Preheat your smoker or setup grill for indirect grilling at 275°F.
  • Wash and snap or cut off the woody stem from bottom of asparagus.
  • Toss with olive oil and then lay the asparagus evenly in your pan. Squeeze fresh lemon juice on top.
  • Sprinkle butter cubes and garlic all over the top of the asparagus. Season with salt and pepper.
  • Place the pan in your preheated smoker, or on the opposite side of the heat if you're using a grill. You need the asparagus to cook over indirect heat. Close the lid.
  • Adjust your asparagus periodically with tongs as the butter melts to keep the asparagus coated in the butter. You'll be glad you did it.
  • Smoke the asparagus for 35-45 minutes or asparagus is tender but firm.
  • When the asparagus is done, remove from the hot pan so asparagus does not continue cooking.
  • Place remaining butter and garlic sauce in a separate container and remove the pan from the heat. Plate the asparagus and drizzle with remaining sauce.
