Golden Oreo Crust
- 1 ½ cups golden Oreo crumbs
- 4 tablespoons unsalted butter melted
Strawberry Cheesecake Filling
Garnish
- Whipped cream or cool whip for piping
- Fresh strawberries sliced
For the crust
Lightly grease a 9-inch springform pan or line the bottom with parchment paper.
In a medium bowl, mix together the Oreo crumbs and melted butter until evenly combined.
Press the mixture firmly into the bottom of the pan.
Refrigerate for at least 20–30 minutes while preparing the filling.
For the filling
Add the strawberries to a food processor and blend until smooth and pureed.
In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
Add the strawberry puree and mix until fully combined.
Gently fold in the Cool Whip until light and fluffy.
Spread the filling evenly over the chilled crust.
Smooth the top with a spatula.
Cover and refrigerate for at least 6 hours, or overnight, until fully set.
Garnish
Before serving, pipe dollops of whipped cream around the edges using a piping bag with a star tip.
Top with sliced fresh strawberries.
- Chill for at least 6 hours, and always use softened cream cheese for a smooth filling so that it sets correctly.
- For clean cheesecake slices, run your knife under hot water and wipe it clean between each cut.
- If freezing the cheesecake, leave off the Cool Whip and strawberry toppings until after thawing, as they do not freeze and thaw well.
