- 3 cups baby arugula
- 3 cups baby spinach
- ½ cup blueberries
- ¼ cup goat cheese feta or bleu cheese
- 1 pear sliced
- 1 cup grape tomatoes
- 1 apple sliced
- ½ cup pecans almonds or walnuts
- 6 figs or dried cranberries
- ¼ cup pomegranate seeds
Make Dressing
In a medium sized bowl, a medium sized container with a lid or large measuring cup combine oil, pomegranate juice, honey, vinegar, and mustard. Whisk or stir together. Add shallots, garlic, and salt and pepper to taste.
Pour dressing into a container and set aside.
Assemble Salad
Place the baby spinach and arugula in a large salad bowl. Scatter on sliced apple, berries, pear, tomatoes, cheese, nuts, dried fruit and seeds right before serving. Add dressing and serve. Enjoy!
- To prevent browning, dip apple and pear slices in lemon water (1 tablespoon lemon juice per cup of water) for a minute, then pat them dry.
- Pair one crisp fruit with one juicy fruit for the perfect balance of crunch and sweetness, adding soft fruits last so they don't bruise or weep into your greens.
- Toss the salad with dressing right before serving for even coating, or serve it on the side to keep the greens crisp.
