- 2 tablespoons chopped cilantro
- 1 large lime juiced, about 1 tbsp
- 2 tablespoons honey
- 1 teaspoon chili powder
- 2 cups diced Mango
- 1 red pepper diced
- 2 jalapenos seeded and diced
- ½ large red onion sliced
Make the dressing. In a medium bowl, combine the cilantro, lime juice, honey, and chili powder. Set aside.
Mix the ingredients. In a large bowl, mix the Mango, red pepper, jalapeno, and red onion.
Add the dressing. Add the honey dressing to the salad mixture and fold it in well until completely incorporated.
Chill. Cover and place the salad in your refrigerator for at least an hour for flavors to blend together (If possible). Toss or stir salad when ready to serve.
