Ingredients

Instructions

  • Prepare honey honey hot sauce if not using homemade.
  • Preheat your oven to 450°F and line a large baking sheet with parchment paper for easy cleanup.
  • Trim the stem ends from the Brussels sprouts, remove any damaged outer leaves, and slice each sprout in half from top to bottom.
  • In a small bowl, whisk together the olive oil, hot honey, garlic powder, red pepper flakes, salt, and black pepper until smooth and well combined.
  • Pour the glaze over the Brussels sprouts in a large mixing bowl and toss until every piece is evenly coated.
  • Spread the Brussels sprouts onto the prepared baking sheet in a single layer with the cut sides facing down whenever possible.
  • Roast for 20 minutes, flipping halfway through, until the edges are crispy, caramelized, and deeply golden brown while the centers are tender.
  • Drizzle with additional hot honey, if desired, and garnish with freshly grated Parmesan, an extra pinch of red pepper flakes, or freshly cracked black pepper before serving.
  • Transfer the roasted Brussels sprouts to a serving platter. Serve immediately while they're hot and crispy.

Notes

  • Choose similar-sized Brussels sprouts: Uniform sizes help everything roast evenly so you don't end up with some overcooked and others undercooked.
  • Dry thoroughly before roasting: Moisture prevents caramelization, so pat the Brussels sprouts dry after washing for the crispiest edges.
  • Don't overcrowd the pan: Arrange the Brussels sprouts in a single layer with space between them so they roast instead of steam.
  • Roast cut-side down: Placing the flat sides against the baking sheet creates beautiful golden-brown caramelization and extra crispy edges.
  • Serve immediately: Brussels sprouts are at their crispiest and most flavorful straight from the oven, so serve them while they're still hot.
