Prepare your slow cooker with cooking spray and set aside. Turn your slow cooker on high.
In a small bowl combine 1 teaspoon salt, 1 tablespoon five-spice powder, and 1 teaspoon pepper.
Add spice mixture to a large resealable bag and add pork chops. Shake until coated or rub spice mixture all over your pork until covered.
Transfer to your slow cooker. Cover and cook on low until pork is cooked and tender, between 5 and 6 hours.
When you are getting ready to serve your supper, combine hoisin, honey, sugar, soy sauce, ketchup, sherry, oil, ginger, garlic, and 1 teaspoon five-spice powder in medium sized bowl.
Prepare a rimmed baking sheet with tinfoil and a rack lightly coated in cooking spray. Turn your oven up to broil.
Place pork chops on top of the wire rack on your prepared baking sheet.
Brush with mixture until all pork chops are coated. Broil until mixture hardens, bubbles and caramelizes on the outside of your pork chops, just two minutes.
Flip and brush the other side of each pork chop. Broil for another two minutes and bubbly.
Remove pork chops from oven and allow to rest for at least 5 minutes before serving. Enjoy!
