Place your brownie bites on a large baking sheet with parchment paper, if desired, for easy cleanup. Use the bottom of a glass to flatten each brownie bite, as evenly as possible, into a disc.
Place a spoonful of edible cookie dough on the center of each disc and use your hands to roll them into balls. Make sure the cookie dough is completely covered. Chill your brownie bites in the freezer for 30 minutes.
After 30 minutes, melt your chocolate chips in the microwave. Start with 1 minute and then continue with 30 second intervals, stirring after each one until the chocolate is completely melted.
Dip each brownie bite in the melted chocolate and then chill them for an additional 30 minutes in the fridge. Enjoy!
