Christmas Funfetti Bread

It’s in the name: sprinkles, larger than life rich vanilla flavor, moist and brightened with light glaze icing and did I mention sprinkles. You may have come across a funfetti cake, but this Christmas bread I think is the best version yet.

  • Preheat the oven to 350°. Grease a bread pan very well. Place oven rack on the top rung.
  • In a large mixing bowl beat together with a hand mixer the butter, sugar and eggs till yellow and creamy.
  • Combine the flour, baking powder, and salt in a separate medium bowl. Set aside.
  • To the large mixing bowl add the milk, sour cream and vanilla mix into a batter.
  • Using a spoon, slowly add the dry flour mixture to the wet ingredient batter.
  • With a large spoon fold ½ cup sprinkles into the batter.
  • Pour the batter into the prepared bread pan.
  • Bake for 40-50 minutes. Insert a toothpick into the middle of the bread to check for doneness. Toothpick should come out clean when baked through.
  • Remove the bread from the oven and let cool for 5 minutes.
  • Prepare your serving dish or cooling rack for the icing of the bread.
  • After the bread has been cooling for 5 minutes, run a knife around the edges of the bread pan to ensure the sides are loosened, then turn the bread pan upside down and gently remove the bread from the pan.
  • Let the bread cool completely before icing.
  • In a large mixing bowl combine the icing ingredients: powder sugar, cream, vanilla, and using a whisk, beat till smooth.
  • Pour evenly over the bread.
  • Top with holiday colored sprinkles.
  • As many or as little as you want.
  • Slice and serve.

Notes

  • Great gift idea for office coworkers, neighbors, church, or coffee with friends. Ready to serve on a dish or wrapped in a bread box with ribbon, brighten the room with one of these and you’re sure to hear “Ooos” and “Awwws”.
  • Use a toothpick to check for doneness. Insert gently into the middle. If it comes out clean, it is done, if it is still gooey, it will need a few more minutes. But, be careful not to overbake, or it will be dry and hard.
  • Storage - Will keep in a resealable bag at room temperature for up to 5 days. Will also freeze well for up to 3 months. To thaw, place in the refrigerator overnight.
