Preheat oven to 325°F and line a baking sheet with parchment paper.
In a large bowl mix dry ingredients, oats, almonds, shredded coconut, brown sugar, cinnamon, and salt.
Coat dry ingredients with honey, oil, and vanilla extract. Mix until evenly coated.
Spread the mixture evenly onto the prepared baking sheet. Bake for 20–25 minutes, stirring halfway through, until golden and crisp.
Allow granola to cool completely before adding chocolate chunks and freeze-dried strawberries.
Drizzle melted chocolate over granola, place baking sheet in refrigerator to allow the chocolate to harden faster.
Once chocolate has set, break up granola and place in an airtight container.
