Chicken Club Sandwich

This Chicken Club Sandwich recipe is perfect for lunch or a quick and easy dinner. It’s one of my favorite ways to use up leftover rotisserie chicken and bacon.

Ingredients

  • 6 slices white or whole wheat sandwich bread toasted
  • 6 tablespoons mayonnaise
  • 3 teaspoons black pepper
  • 2 slices Swiss cheese
  • 2 slices cheddar cheese
  • 8 iceberg lettuce leaves
  • 6 slices large tomato or beefsteak tomato
  • 2 rotisserie chicken breasts sliced
  • 4 slices deli ham
  • 4 slices pre-cooked bacon

Instructions

  • Toast the bread.
  • Smear the mayonnaise on one side of each slice of the toasted bread.
  • Sprinkle black pepper on top of the mayonnaise.
  • In order place the cheese, lettuce, tomato, and chicken on top of the first piece of toasted bread.
  • Place a piece of toasted bread on top.
  • In order place the cheese, lettuce, ham, bacon, and tomato on top of the second piece of the toasted bread.
  • Top the sandwich with the third piece of toasted bread.

Notes

  • Store an extra or leftover chicken club sandwich tightly wrapped for up to 2 days in he refrigerator.
  • Try this sandwich with cooked or baked chicken breasts instead of rotisserie chicken if you want.
  • Pat the lettuce and tomato dry with paper towels to prevent the bread from becoming soggy.
