Brie Grilled Cheese

Brie grilled cheese is a gourmet twist on a classic! Creamy, smooth, melted brie, sweet preserves or jam, and crispy buttery bread make this sandwich rich, flavorful, and totally irresistible. It’s an easy lunch or dinner that's restaurant-worthy.

Ingredients

  • 2 slices sourdough bread
  • 2 tablespoons butter
  • 3 ¼" slices of brie cheese
  • 3 tablespoons raspberry preserves
  • ¼ cup shredded mozzarella cheese

Instructions

  • Place the 2 slices of bread on a cutting board; spread 1 side of each slice with a tablespoon of butter.
  • Heat a dry small nonstick skillet over medium heat.
  • Place 1 slice of bread, butter side down, in the pan and top with the brie cheese, the raspberry preserves, and then the mozzarella cheese.
  • Arrange the second slice of bread, butter side up, on top.
  • Cook the sandwich until golden brown underneath, about 2 minutes. Carefully flip the sandwich using a flat spatula. Gently press down on the sandwich with that spatula to encourage even browning and help the cheese melt.
  • Cook until the second side is golden brown and the cheese is melted, about 2 minutes.
  • Once golden brown on both sides and the cheese has melted, remove from the heat and serve (rest for 1 min so cheese sets).

Notes

  • Use room temperature brie: Melts faster and more evenly. Luckily brie has a low melting point.
  • Cook on medium heat: Prevents bread from burning before cheese melts.
  • Butter evenly: Ensures a consistent golden crust.
  • Serve immediately: Best taste.
  • Slice diagonally: Better presentation.
  • Trim rind slightly if desired: Reduces strong flavor while keeping creaminess.
  • Add mozzarella or mild cheese: Improves stretch and melt factor.
  • Use sturdy bread like sourdough: Holds the soft filling without falling apart.
  • Spread preserves thinly: Prevents overpowering sweetness.
  • Press sandwich gently while cooking: Helps layers bind together.
  • Flip carefully with a wide spatula: Keeps filling from oozing out.
  • Rest for 1 minute before slicing: Allows cheese to set slightly for cleaner cuts.
