Preheat oven to 350ºF.
Prepare 9x13 cake pan with parchment paper extended over the ends for easy removal. (Use two 8-inch pans to prepare half blue and half pink cake pops if expecting fraternal twins).
In a mason jar add flour, sugar, baking powder and baking soda. Give it a shake to blend and add 11 level tablespoon to the 13.25 oz or 14 oz dry cake mix and stir until blnded well.
Prepare cake mix batter according to box directions. Use milk instead of water, if possible. Add extra egg and vanilla.
Add blue or pink gel food coloring until desired color is reached. The exact amount will depend on the type of food coloring you are using.
Pour batter into prepared pan.
Bake according to box directions or until a toothpick comes out clean. Allow cake to cool.
Prepare a large baking sheet by lining it with parchment paper.
Using a fork, crumble the cake right in the pan.
Add frosting and work with hands until the dough holds together and you can form a ball.
Using a 2 tablespoon scoop, scoop dough, form it into balls, and place balls on your prepared baking sheet.
Melt a small amount of almond bark. Dip skewers into melted bark and then push them into the cake pops.
Freeze for 1 hour.
Melt remaining white almond bark. If it seems too thick, you could add a small amount of coconut oil to thin it a bit. This will depend on the consistency of your bark.
Roll each cake pop in melted bark, allowing excess to drip off.
Add sprinkles quickly before bark hardens.
Chill before serving.
