Place parchment paper on bottom of your 7 inch round metal cake pan and coat in cooking spray.
Also, spray a small amount of cooking spray on your workstation. Place dough on top and manipulate dough until it's roughly a 6 or 7 inch flat square. Then slice into 12 pieces using a pizza cutter.
Cover dough with plastic wrap until needed. You don't want your dough to dry out.
Shape 1 piece of dough at a time into a 3 to 3 ½ inch circle.
Place a slice of pepperoni into the middle of each circle, followed by a teaspoon full of pizza sauce. Top with cheese Then another slice of pepperoni, more cheese, and finish with a final slice of pepperoni.
Seal the filling by gently pulling the dough over it until it is closed.
Place 4 balls seam side down inside your prepared pan. Cover the remaining balls with plastic wrap until you are ready to cook them so they don’t dry out.
Preheat the air fryer to 350 degrees. In the mean time prepare the garlic oil. Using a small microwave-safe bowl combine oil and garlic. Heat in 15 second intervals until you can start to smell the garlic, usually 30 to 45 seconds.
Brush the tops of the pizza balls with oil. Place the pan in the preheated and air fryer and cook at 350 degrees for 7 minutes until slightly golden.
Once cooked brush with more garlic oil and sprinkle with fresh parmesan and parsley if desired. Wrap in foil to keep warm until the remaining rolls are cooked. Serve hot with extra pizza sauce for dipping if desired.
