    Roasted Sweet Pepper Egg Cups

    Roasted Sweet Pepper Egg Cups or Egg Boats are an easy breakfast, keto, baked bell peppers stuffed with scrambled, egg whites or regular eggs and cheese!

    Pepper Egg in a Hole

    This recipe started with slicing a ring off of a cleaned sweet pepper about a half an inch to three quarters of an inch thick.

    Remember that your pepper has to hold an entire egg. If your pepper is smaller your pepper slice needs to be thicker so your egg doesn't overflow the pepper.

    We would add some cooking spray or butter to the pan, over medium heat, and place the sweet pepper ring inside the pan.

    Next, we would crack an egg inside the ring and wait for it to cook.

    Sometimes we would scramble the egg, maybe add some peppers and onions to the egg or even cheese.

    Always a delicious idea and a super easy breakfast, perfect for any day of the week.

    After a while, and I can't remember why, we switched to baking the entire egg completely inside the half of pepper. They were easier to prepare and actually worked better overall.

    Bell Pepper Egg Boats

    Now, you can make your favorite kind of eggs in these sweet bell pepper egg cups or boats. It doesn't much matter what you want to call them, the important part is they are delicious!

    You can totally control how well cooked you want your egg yolk to be. I know some love to dip and some definitely do not.

    You can just crack an egg or two inside and bake them just like that!  Perfect for dipping your yolks in without making a mess!  I love that the runny yolks stay inside each cup!

    Scrambled Egg Stuffed Peppers

    Especially when our son Patrick was small we made scrambled eggs and later omelets inside each pepper and he loved helping make them all.  I was in charge of preparation and he was in charge of construction!

    He knew what ingredients we had and he used to take orders for each pepper.  He wrote down what everyone wanted in theirs and made each one perfectly!

    Patrick would always watch them bake, when they were ready he would plate them and deliver each with a huge smile on his face!

    He was always so proud of himself and he took his job seriously!  I smile just remembering it.

    You really can use any toppings you want or need to make these Roasted Sweet Pepper Cups and Eggs.  Whatever you would include in an omelet will most definitely work here.

    Oven Baked Eggs Recipes

    I enjoy eggs first thing in the morning and I just love baking them in things. Believe it or not I even tried to bake an egg in an onion and it worked. The problem was how overwhelming the onion flavor was.

    Was it ever. I remember it like it was yesterday. I just shivered a little by the way. That was just awful. Now onto happier things.

    You can pick them all right up and take them with you if you are on the go, or, sit and eat them as a meal, right at the table! For the record, my son also puts them both inside a bun or toast.

    Baking an egg in a tomato, sweet pepper or portobello mushroom is a wonderful breakfast or brunch idea but you can't forget about dinner! I can't be the only one who loves breakfast for dinner! I just know it.

    Oven baked egg recipes for dinner are always easy. Well, I shouldn't say always but usually easier than so many dinners I can think of and delicious too!

    Recipes with Sweet Peppers

    Needless to say I have a few things I love to do with peppers besides these Roasted Sweet Pepper Cups and Eggs!

    This includes filling them with meat and stuffing in my Stuffing Peppers or meat, rice and cheese in my Awesome Stuffed Peppers.

    Now that I think about it I use peppers in so many recipes and I can't seem to help it!

    The last recipe I am going to mention in is an easy Simple Steak or Chicken and Peppers Stir Fry which is full of peppers and either steak or chicken!  Totally tasty too!

    Bell Pepper Breakfast

    Using sweet peppers to make breakfast is super easy and there are so many options for you to choose from. You can easily add sweet peppers to your scrambled eggs or omelet baked inside your bell peppers.

    I am a huge fan of sweet peppers so I always figure the more the merrier!

    These cups are delicious and a simple way to serve breakfast or brunch for a crowd too.  You can decide how big of a pepper you buy.

    The smaller peppers will hold one egg and the bigger peppers two!  They look so bright and colorful on a serving plate and everyone generally loves them!

    I urge you to try these bell peppers stuffed with scrambled eggs, eggs or omelets whenever you are in the mood for a terrific breakfast that happens to be healthy too!

    The healthy part is just an added bonus!

    Keto or Egg White Stuffed Peppers

    Whether you enjoy a keto diet and are looking for egg stuffed peppers that are within your eating plan you have come to the right place. These stuffed peppers are keto!

    If you are looking to make this recipe healthier than you might want to consider making these bell peppers filled with only egg whites. No egg yolks at all.

    Remember you are still able to add whatever vegetables you desire, if any.

    Ingredients for Bell Pepper Egg Boats

    • large sweet peppers
    • cheese
    • eggs
    • green onion
    • salt
    • pepper

    How do you make Roasted Sweet Pepper Cups and Eggs?

    Halve and core your sweet peppers, slicing right through the stem.

    Place on a foil lined baking sheet, cut sides down, and bake for about 10 minutes. You want the peppers to start to soften. They have to be able to support the egg or eggs and whatever else you add to them.

    Remove from oven and flip the peppers over.

    Sprinkle with cheese, add meat if you are using it and some green onions.

    Crack 1 or 2 eggs into each pepper half, sprinkle with salt and pepper.

    Bake.

    Sprinkle with remaining cheese and rest of green onion. Broil until cheese is melted and lightly browned.

    • 4 large eggs
    • 2 peppers, green, red, orange or yellow, large, cut in half and cored
    • ½ cup cheese, shredded
    • 2 green onion. thinly sliced, white and green parts separated
    • salt - pinch
    • pepper - pinch

    • Preheat your oven to 425 degrees.

    • Remove from oven and flip the peppers over.

    • Crack 1 or 2 eggs into each pepper half, sprinkle with salt and pepper.
    • Bake until egg whites are almost set, between 8-10 minutes if using 1 egg per pepper or 12-15 minutes if using 2.
    • Sprinkle with remaining cheese and rest of green onion.
    • Broil until cheese is melted and lightly browned, about 1-3 minutes.
    • Serve and enjoy!

      What a great idea! I love peppers (especially the red and orange ones) and cheese, and like to find ways to cook them, and the eggs have the added flavor and benefit of protein! Yummy. I will be making these for my friends that I love to cook for...it's nice to do something that we haven't seen before, thanks for your recipe!
