    No, this recipe is a big winner because it's so darn good! It features the perfect mix of spices paired with bacon completely wrapped around the exterior of the tenderloin. It all comes together to create a flavor profile that is Heaven in every bite.

    Why Use an Air Fryer

    Air fryers are just about the best kitchen gadget ever invented. They cook food very fast and evenly, making recipes a breeze. Air fryers work by using heat and circulating air. They're basically small, countertop convection ovens.

    The combination of heat and circulating air makes for incredibly even cooking. And because you only have to use a small amount of oil - if you have to use any at all - it's also a far healthier option than traditional pan frying.

    This recipe doesn't use oil, but the air fryer still does an amazing job of cooking up the tenderloin to tender juicy perfection. Thanks to the air fryer, this tenderloin cooks up quickly, and it stays tender and juicy, which is exactly what you need with a cut of meat this lean.

    I've been making pork tenderloin for decades. It's always been one of my go-tos for a family meal. There are just so many things you can do with a pork tenderloin! I've made it with a rub, barbecue sauce, herb crusted, and more.

    One of my favorite variations, however, is this bacon wrapped air fryer pork tenderloin.

    When you combine this delicious, lean cut of pork with fatty bacon and herbs, what you get is a combination that makes all your tastebuds happy.

    The mellow flavor of the tenderloin melds with the smokiness of the bacon and the aromatic flavors of the herbs perfectly, creating a dish that has a ton of flavor in every single bite. It's the perfect family dinner!

    It's the kind of thing that my family always loves, and I love how easy it is.

    When I got my air fryer, I quickly realized that it was the greatest cooking invention ever, and I've been using it for all kinds of recipes ever since. This pork tenderloin is the perfect example of how the air fryer can take anything and make it better.

    I used to make this recipe in the oven. It took longer, and it was more difficult to get it to come out perfectly juicy every time. When you make it in the air fryer, however, it takes far less time, and it's almost impossible for it not to be absolutely perfect each and every time.

Here's what you'll need.

    • 7-8 slices thick cut bacon
    • 1 boneless pork tenderloin about 1 ¼ pounds trimmed
    • ¼ cup Dijon, yellow or grainy mustard or a combination
    • 1 teaspoon thyme leaves, oregano or basil
    • 1 scallion finely diced
    • 4 cloves garlic minced

    See? It's a really short list. All of the ingredients are incredibly simple, and you probably already have all the spices in your kitchen already!

    Making the Air Fryer Bacon Wrapped Pork Tenderloin

    Making this recipe is almost as simple as the ingredient list itself. You'll just be mixing the herbs, coating the tenderloin with them, wrapping the entire thing in bacon, and then air frying. It's easy peasy. Here's what you'll do.

    • Mix mustard garlic scallion and thyme.
    • Arrange bacon in rows touching on the cutting board. The length of the tenderloin.
    • Place tenderloin on bacon and brush with mustard mixture.
    • Wrap bacon tightly around the tenderloin.
    • Using toothpicks or string secure bacon.
    • Cut tenderloin in half.
    • Place pork in the basket and air fry at 350 degrees or about 30 minutes or 145 degrees with a thermometer.
    • Rest 10 minutes on the cutting board before slicing to serve with salad, potato, and veggies.

    This air fryer bacon wrapped pork tenderloin may be an easy recipe, but there are still some things to bear in mind to make sure that you get the best possible outcome possible. These are all simple tips, but they can make a big difference, so be sure to look them over.

    Invest in a Meat Thermometer

    Although you can cook this tenderloin for about a half hour in an air fryer set at 350 and it will probably be fully cooked, the only way to really know is to use a meat thermometer. As is the case with cooking any meat, the best way to measure doneness is with a thermometer, so invest in a meat thermometer. You'll be glad you did.

    Preheat the Air Fryer

    Although some people never preheat their air fryer, I find that recipes work better when you do. Just like any other cooking method, preheating ensures that your meat cooks at an even temperature from start to finish. Air fryers heat up fairly quickly, so take the extra couple of minutes it takes to do so.

    Wrap as Tightly as Possible - Carefully

    You want to wrap your bacon around the tenderloin as tightly as possible, but be careful not to rip the bacon. The bacon not only adds flavor, but it also contains the herb mixture. If you rip the bacon, your herb mixture could run out.

    Variations

    The herb mixture called for in this recipe works absolutely perfectly with the tenderloin and the bacon. The only variation I recommend is maybe playing with the bacon you use. always use thick cut bacon, but feel free to try different varieties. You can find maple bacon, smoked bacon, peppered bacon, and many other varieties. Any of them will work well with this recipe. Give them all a try.

    Storing Air Fryer Bacon Wrapped Pork Tenderloin

    This tenderloin will keep well in an air-tight container in the refrigerator for up to four days. For longer storage, you can freeze this tenderloin for up to a month. Allow the tenderloin to cool completely in the refrigerator and then wrap it tightly in clingwrap and foil.

    To eat, simply defrost in the refrigerator and reheat it in the oven or air fryer until heated through.
