Watermelon Vodka Cocktail

This watermelon vodka cocktail is cold, refreshing, and perfect for summer. Make it boozy for adults or go alochol-free for the kids!

Ingredients

  • 8-10 cups seedless watermelon chunks
  • 1 cup vodka or more
  • cup freshly squeezed lime juice
  • 1 tablespoon simple syrup or more

Optional

  • Club soda

Instructions

  • In batches add watermelon to a blender and run until smooth.
  • Strain into a spouted measuring cup then pour into a large pitcher.
  • Pour in vodka, lime juice and simple syrup.
  • Stir then pour into a glass full of ice.
  • If you like a fizzy drink, top with club soda.

  • Refrigerator: Store for up to 2 days in a pitcher.
  • Freezer: Store for up to 2 months in an airtight, freezer-safe container. Defrost it in the refrigerator overnight before serving or serve partially frozen for a slushy.
  • Make Ahead: You can make this cocktail up to 24 hours in advance. Add the club soda just before serving.
