Vegetarian Chili - Weight Loss Chili

Slow Cooker Vegetarian Chili is simple to make and is the perfect fall dinner.

Ingredients

  • 1 Tablespoon Canola Oil
  • 1 medium Onion chopped
  • 1 medium Red Bell Pepper chopped
  • 1 medium Jalapeno pepper seeds removed and chopped
  • 2 cloves Garlic minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) black beans rinsed and drained
  • 1 can (15 oz) chickpeas rinsed and drained
  • 1 cup frozen corn
  • ¼ cup Tomato Paste
  • 1 teaspoon Sugar
  • 1 teaspoon basil chopped fresh or dried
  • 1 tablespoon Mexene Chili Powder Mix or chili powder more or less to taste

Instructions

  • Get out and measure your ingredients.
  • Heat oil in a large skillet over medium high heat. Add the onion, bell pepper, garlic and jalapeno peppers.
  • Cook until translucent and soft. Add garlic and stir until fragrant, 30 seconds.
  • Transfer to your slow cooker along with the remaining ingredients.
  • Stir until combined. Cook on low for 4-5 hours.
  • Serve with favorite toppings – sour cream, grated cheese, avocado, chips etc.
  • Enjoy every bite!
