Sweet Potato Shepherd’s Pie

- ¼ cup butter
- 1 small sweet onion diced
- 1 tablespoon garlic diced or minced
- 2 pounds ground beef 80/20
- 2 tablespoons tomato paste
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 ½ cups frozen mixed vegetables peas, carrots, corn, green beans
3 cups mashed sweet potatoes
- 2 -2 ½ pounds sweet potatoes about 3–4 medium-large sweet potatoes
- 4 tablespoons unsalted butter or ¼ cup
- ½ -1 teaspoon salt (start with ½ and adjust)
- ¼ -½ teaspoon black pepper (to taste)
- 2-4 tablespoons milk or cream (optional)
- fresh parsley for garnish
Mashed Sweet Potatoes
Peel and chop the sweet potatoes into chunks, then boil in salted water for 15–20 minutes until fork tender. Drain well, then mash with butter, salt, and pepper until smooth and creamy. Adjust seasoning to taste and serve warm.
Shepherd's Pie
In a large non-stick skillet over medium heat, melt your butter and sauté the onions and garlic until translucent and fragrant.
Add the ground beef to the skillet and turn the heat to medium-high to brown, flipping and breaking it up as it browns. Drain any excess grease.
Add the tomato paste, salt, pepper, and paprika. Stir until well combined. Then mix in the frozen vegetables.
Assembly
Place the ground beef mixture into the bottom of your prepared dish and spread it out evenly. Layer the mashed sweet potatoes over the top and smooth out.
Bake uncovered for 30 minutes or until the mashed sweet potatoes are starting to darken and the edges are bubbly.
Garnish with parsley and serve!
- For extra color and flavor, place the pie under the broiler for 2 to 3 minutes after baking. This helps brown the top and caramelize the sweet potato edges.
- Make sure the potatoes are well drained before mashing and avoid adding too much butter. Excess moisture can prevent the top from browning and may make the filling seem thinner.
- Drain the excess grease after browning the beef. This helps keep the filling rich and flavorful without becoming overly greasy.
