Smoked Chicken Salad
This smoked chicken salad recipe takes very little work for a lot of flavor. Smoked chicken salad is the perfect appetizer for any occasion.

- 4 boneless, skinless chicken breasts no more than 1 inch thick, trimmed
- ½ cup mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- 2 celery ribs minced
- 1 shallot minced
- 1 tablespoon minced fresh parsley
- 1 tablespoon minced fresh tarragon
- Salt and pepper to taste
Gather all the ingredients needed.
Coat chicken breasts in dijon mustard and then season with salt and pepper.
Smoke the chicken at 250* for about 2 hours or until chicken reached 165*
Remove the chicken from the smoker once cool. And chill in the fridge for 30 minutes to one hour or until the chicken is cold.
While chicken is chilling mix together mayo and lemon juice
Once chicken is cooled pat dry with a paper towel, the cut or shred.
Add celery, shallot, parsley,chicken and tarragon to mayo and lemon juice mixture; toss to combine.
Season with salt and pepper to taste.
