Gather all the ingredients needed
Microwave onion, bacon, garlic, oil, and ½ teaspoon salt in bowl, stirring occasionally, until onion is softened, about 5 minutes.
Add onion and bacon mixture to a heat safe pan.
Stir in water, beans, ¼ cup barbecue sauce, coffee, and bay leaves.
Smoke at 200 degrees for 5 hours
Discard bay leaves. Stir in vinegar, mustard, and remaining ¼ cup barbecue sauce.
Smoke for an additional hour
