Prepare the slow cooker with a light coating of cooking spray.
Brush the turkey legs with olive oil and set aside.
In a small bowl, combine the dried seasonings and stir until well mixed.
Rub the entire mixture over each side of the turkey legs.
Transfer the seasoned legs into the prepared slow cooker.
Pour 2 cups of water in the bottom of the slow cooker.
Cover the pot and cook for 3-4 hours on high or 6-8 hours on low.
Remove legs from slow cooker and transfer to serving platter.
Optional: Place under the broiler for a few minutes to brown the skin, if desired.
Serve with fresh parsley as garnish.
