Shrimp Lo Mein

Instructions

  • If you plan on making our homemade teriyaki sauce, make it first and set aside until needed.
  • Get out and measure all of your ingredients.
    Ingredients needed to make shrimp lo mein.
  • In a stockpot, add shrimp, sliced bell pepper, garlic, carrots, lo mein noodles, and chicken broth.
  • Cook over medium high heat and bring to a boil. Then, cover and reduce heat to a simmer for 7 minutes. Drain excess broth.
  • Add teriyaki sauce.
  • Stir well to coat.
  • Top with more chopped green onion.
  • Serve.
  • Enjoy every bite!

Make Teriyaki Sauce

  • In a small saucepan combine soy sauce, sugar, ginger, and garlic.
  • In a small bowl combine mirin and cornstarch. Stir until cornstarch is dissolved.
  • Next, add to soy mixture. Bring sauce to boil over medium high heat, stirring occasionally.
  • Then reduce your heat and simmer, stirring occasionally, until sauce is reduced and becomes syrupy, between 6 and 7 minutes. Add honey and stir.
  • Taste mixture to see if you want to add more honey. My husband prefers a sweeter teriyaki sauce than I do! Add more honey if you prefer!
  • Cover and set aside until needed.
