  • Let’s start with prepping the pan so that it is ready when we need it. Give a 9x13 pan a light mist with non-stick cooking spray.
  • Warm the butter and chocolate chips in a large saucepan over low heat until melted. You’ll want to stir often to keep the chocolate from burning.
  • Once both have melted, add in the black cocoa powder and mini marshmallows. Stir continuously over low heat until the marshmallows have melted.
  • Remove the saucepan from heat and stir in the rice krispie cereal until it is thoroughly coated.
  • Spoon the mixture into your prepared pan and lightly press the cereal evenly. Let it sit and cool for 30 minutes.
  • Remove from pan to a cutting board. If you want to add in the spiderwebs, melt about ½ cup of mini marshmallows in the microwave for 30 seconds. Cool the melted marshmallows for a few minutes or until it is safe to touch with your fingertips without burning. Stretch a bit of the cooled marshmallow over the top of the rice krispie treats in a random pattern as desired.
  • Add sprinkles and candy eyeballs for an added treat.
  • Let the bars sit for a five minutes to allow the marshmallow to set before slicing and serving.

  • Melt Everything Gently: Keep the heat low and stir constantly while melting the butter, chocolate, black cocoa, and marshmallows. Black cocoa scorches easily, so low heat is essential for a smooth, glossy mixture.
  • Work Quickly: Once you stir in the cereal, immediately press the mixture into the pan before it begins to firm up. Press gently instead of packing it tightly to keep your Rice Krispie Ghosts Treats soft and chewy.
  • Know Your Black Cocoa: Black cocoa powder can often be found at bulk food stores. It may look dark brown while mixing, but don't worry—it deepens to a rich jet-black color as the treats cool.
  • Decorate While Sticky: Stretch the marshmallow web over the treats once it's cool enough to handle, then immediately add the candy eyeballs and Halloween sprinkles while the marshmallow is still tacky so they stick.
  • Easy Substitutions & Handling: If you can't find black cocoa, use regular cocoa powder with black food coloring. Use a lightly greased spatula, lightly dampen your hands with water or coat them with nonstick cooking spray before handling the marshmallow. A or lightly greased fingers make pressing the sticky mixture into the pan much easier.
