Line a baking sheet with parchment paper or wax paper. Arrange the pretzels in a single layer on the prepared baking sheet.
Cut the banana into thin slices and place one slice on each pretzel. Top each banana slice with a small spoonful of peanut butter.
Place the baking sheet in the freezer and chill for 30 minutes.
Meanwhile, melt the chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring after each until smooth.
Remove the pretzel bites from the freezer and dip each one into the melted chocolate, making sure it is completely coated. Return the coated bites to the baking sheet.
Freeze for an additional 30 minutes, or until the chocolate is fully set. Serve and enjoy!
- Use thick peanut butter: Helps keep layers from sliding apart. Natural or organic peanut butter is much runnier, which will prevent it from sticking to the pretzel and is not recommended
- Freeze before dipping: Chilling makes coating easier and prevents mess
- Melt chocolate in intervals: Melt in 20 second intervals, stirring in between each to prevent burning and keep chocolate smooth
- Add a little coconut oil to chocolate: Creates a glossy finish and easier dipping
- Use a fork or dipping tool: Helps evenly coat each bite
- Tap off excess chocolate: Prevents thick or uneven coating
- Work in batches: Keeps bites firm while dipping
- Line tray with parchment paper: Prevents sticking and simplifies cleanup
- Add toppings immediately: Sprinkles or sea salt should go on top before chocolate sets
- Store properly in layers: Separate with parchment to prevent sticking
- Ripe Bananas: Use bananas that are a little ripe, but not too ripe. Super ripe bananas will be hard to cut into clean slices and will be a lot softer. I recommend using bananas that are yellow and just barely starting to brown.
