  • Preheat the oven to 400°F and coat a mini muffin tin with nonstick cooking spray.
  • In a medium sized bowl, whisk together the milk, egg, melted butter, and vanilla until thoroughly combined.
  • Whisk in the baking powder, flour, and granulated sugar until the pancake batter is smooth and homogenous. Fold in the cheese until it is evenly distributed throughout the batter.
  • Fill your mini muffin tin with the batter. Slice your cooked sausage links into discs about ½ inch thick and place one piece of sausage in the center of each muffin.
  • Bake your pancake sausage bites for 15 minutes.
  • Serve and enjoy!
