Oven Baked Bacon Pork Chops

These Bacon Wrapped Pork Chops are incredibly juicy and tender. They are baked in the oven until the bacon is perfectly crispy and caramelized in brown sugar.

Instructions

  • Preheat your oven to 400°F (200°C).
  • Sprinkle salt and pepper evenly over both sides of each pork chop.
  • In a small bowl, combine onion powder, garlic powder, Italian seasoning, and brown sugar. Mix the ingredients well.
  • Wrap each well-seasoned pork chop with 2-3 uncooked bacon slices. You might need to secure the bacon slices with toothpicks to keep them in place.
  • Sprinkle the brown sugar mixture evenly over all sides of the wrapped pork chops.
  • Line a rimmed baking sheet with parchment paper or aluminum foil, then place a wire rack on top of the lined baking sheet.
  • Place the bacon-wrapped pork chops on the wire rack, leaving space between each chop.
  • Bake the wrapped pork chops in the preheated oven for 25-30 minutes. I recommend using an instant-read thermometer to check that the internal temperature of the thickest part of the meat reaches 145°F (63°C).
  • Remove the juicy pork chops from the oven and let them rest for 3-5 minutes before serving with asparagus, Brussels sprouts, green beans, potatoes, or a salad.

Stuffing the Pork Chops

  • At the start of prep, cut a small pocket through the side of each pork chop. Ideally, find a location where there is no thick fat to make your pocket. Cut into the pork chop as deep as possible without cutting through the opposite side. We try to stuff as much as possible inside the pork chop. Then continue with seasoning and wrapping the pork chops.
  • To cook, stand the stuffed pork chop up, along the edge of your pan to prevent the filling from running all over the pan and out of your pork chop!

Notes

  • Flip the chops: If needed, flip the chops halfway during the cooking time.
  • Use pork chops of the same thickness: Ensure your pork chops are as close to the same thickness as possible so they all cook evenly.
  • Broil if needed: If you want the bacon to be crispier, set your oven to broil during the last few minutes of cooking time. Keep an eye on it so they don’t burn.
