Combine the coconut oil, peanut butter, cocoa powder, maple syrup, and oats in a large mixing bowl.
Spread the mixture into an 8x8 inch baking dish.
Melt your chocolate chips in the microwave, in 20 second intervals, stirring between each. Immediately spread over the top of your oatmeal bars using a spatula. If you’d like you can top them with a little flakey sea salt.
Chill your bars in the fridge for at least an hour before slicing. Serve and enjoy!
