  • Preheat your oven to 425 degrees F and line a 9x13 baking sheet with parchment paper.
  • In a large bowl, combine the olive oil, salt, black pepper, and cinnamon. Add the cubes of sweet potato to the bowl and stir until each cube is well coated.
  • Spread the sweet potato cubes out on the parchment-lined baking sheet and bake for 30 minutes, flipping halfway through. Remove from the oven and set aside.
  • In a large heavy-bottomed skillet over medium high heat, brown the ground beef by flipping and breaking it up as it cooks, 8-10 minutes. Once no pink remains, remove from heat and drain any excess grease.
  • Add the taco seasoning and tomato paste to the meat and stir it in well. Set aside.
  • Assemble your bowl by adding equal parts sweet potatoes, ground beef, cottage cheese, and sliced avocado. Drizzle the avocado with lemon juice to prevent it from browning. Drizzle the hot honey sauce over all of the ingredients and sprinkle with red pepper flakes. Serve.
  • Step 1: Prepare the sweet potatoes.
    Preheat the oven to 425°F and line a baking sheet with parchment paper. In a large bowl, toss the sweet potatoes with olive oil, salt, pepper, and cinnamon until evenly coated. Make hot honey while potatoes are baking.
    Step 2: Roast until tender.
    Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25 to 30 minutes, flipping halfway through, until tender and lightly caramelized.
    Step 3: Cook the beef.
    While the sweet potatoes roast, cook the ground beef in a large skillet over medium-high heat, breaking it apart as it cooks. Once browned and no pink remains, drain any excess grease.
    Step 4: Season the beef.
    Add the taco seasoning and tomato paste to the skillet. Stir until the beef is evenly coated and heated through.
    Step 5: Prepare the toppings.
    Slice the avocados and toss them with lemon juice to prevent browning. Gather the cottage cheese, hot honey, and red pepper flakes for assembly.
    Step 6: Assemble and serve.
    Divide the roasted sweet potatoes, seasoned beef, cottage cheese, and avocado among serving bowls. Drizzle with hot honey, sprinkle with red pepper flakes, and serve immediately.

Notes

 
cinnamon- cinnamon sugar is a sweeter alternative.
cubed sweet potatoes- my cubes were ½ inch cubes
ground beef- I used 80/20 but leaner beef works great too.
taco seasoning- you can use low-sodium to cut back on salt.
tomato paste- you could use tomato sauce instead of paste but the beef will be runny.
cottage cheese
avocados
lemon juice- this is optional, but it keeps the avocados from browning quickly.
hot honey (Kitchen Divas Recipe) ½ cup unsalted butter, ½ cup hot sauce, ½ cup liquid honey, 2 teaspoon Cajun seasoning.
You will need the following supplies:

Storage Instructions: You can store the ground beef and sweet potatoes separately in air-tight containers in your refrigerator for up to 4 days. You can freeze them for up to 3 months. Once ready to eat, heat and prepare with other ingredients in bowls.
