  • Preheat oven to 400ºF.
  • In a small bowl, combine olive oil, breadcrumbs, parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper.
  • Press mixture onto each filet.
  • Place breaded salmon filets on a baking sheet lined with aluminum foil and sprayed with non-stick cooking spray.
  • Bake salmon for 15 minutes or until internal temperature reaches 145ºF

Notes

  • Store leftover herb-crusted salmon filets in an airtight container in the refrigerator for up to 3 days.
  • Adding too much olive oil to the breading mixture or not letting it cook long enough can result in a soggy crust.
  • For extra moist salmon, allow it to rest for about 10 minutes after it comes out of the oven.
