Grilled Mac and Cheese Sandwich

- 2 slices thick-cut white bread also sourdough, Texas toast or your favorite thick sturdy bread
- 2 tablespoons butter mayo or a blend of butter and mayo works too
- 1 cup prepared macaroni and cheese warm, (boxed, leftover or store-bought)
- 2 slices cheddar cheese American, mozzarella, colby jack or Monterey jack cheeses
Place the bread slices on a cutting board and spread one side of each slice evenly with butter.
Heat a small nonstick skillet over medium heat. Place one slice of bread in the skillet, butter-side down. Top with one slice of cheddar cheese, the prepared macaroni and cheese, and the remaining slice of cheddar cheese.
Place the second slice of bread on top, butter-side up.
Cook for about 2–3 minutes, or until the bottom is golden brown. Carefully flip the sandwich with a spatula and gently press down to help the cheese melt and promote even browning.
Cook for another 2–3 minutes, or until the second side is golden brown and the cheese is fully melted.
Remove from the skillet, slice if desired, and serve immediately.
