Notes

  • Set yourself up for success: Line the baking sheet with foil for easy cleanup, use a wire rack to allow grease to drip away, and arrange the bacon in a single layer so it cooks evenly.
  • Glaze properly: Drain excess grease before glazing and brush every slice evenly to ensure the sweet and savory coating sticks and caramelizes consistently.
  • Watch the final bake: The brown sugar can caramelize quickly, so keep a close eye on the bacon during the last few minutes and adjust the baking time based on how crispy you like it.
  • Let it rest briefly: Allow the bacon to cool for a few minutes after baking so the glaze can set and develop its sticky texture.
  • Serve warm: Glazed bacon has the best flavor and texture when served fresh from the oven while it's still warm and caramelized.
  • Thick-Cut Bacon: Use thick-cut bacon for a meatier texture and extra smoky flavor. Bake for 15 minutes, brush with half the glaze and bake for 10 to 12 minutes, then flip, brush with the remaining glaze, and bake for another 10 to 12 minutes. Total baking time will be approximately 35 to 40 minutes, depending on your preferred level of crispness.
