Slice jalapeños into ¼-inch thick rings. Remove seeds if you don’t want them too spicy and pat the rings dry with paper towels.
In a medium bowl, whisk together flour, baking powder, chili powder, smoked paprika, garlic powder, and salt.
Slowly whisk in the cold beer until the batter is smooth and pourable.
Heat 1½ to 2 inches of vegetable oil in a deep skillet or saucepan to 350°F.
Dip each jalapeno ring in the batter, allow excess to drip off, and carefully place into the hot oil. Fry in batches for 1–2 minutes per side until golden brown and crispy.
Use a slotted spoon to transfer the fried jalapeños to a paper towel-lined plate. Sprinkle lightly with salt and extra chili powder if desired.
