Cucumber Agua Fresca

This Cucumber Agua Fresca recipe is an easy, 4-ingredient drink that you can have ready in 5 minutes. It’s a traditional Mexican beverage that blends fruit, water, and a sweetener like sugar.

Ingredients

  • 2 cucumbers chopped into large chunks, peeling optional, organic recommended if not peeling
  • 5 cups water
  • Juice of 4 limes about ⅓ cup
  • ½ cup sugar

Instructions

  • Add cucumber pieces to the blender and enough water to bring you under the max line; reserve the rest for later. Blend on high until smooth and well mixed.
  • Strain the cucumber juice into a pitcher or a large, spouted measuring cup with a fine mesh strainer or a cheesecloth. Do twice if desired for a smoother consistency.
  • Once in a pitcher add sugar, lime juice and the remaining water. Stir well to combine and dissolve the sugar.
  • Serve over ice.

Notes

  • For the smoothest consistency, strain it through a fine mesh strainer and then again through cheesecloth to remove as much of the solids as possible.
  • Since everything is blended and strained, you can leave the seeds in the cucumbers. Removing them reduces the yield and adds an extra, unnecessary step.
  • This recipe makes about 6 cups, and you can easily double or triple it—just be sure you have a large enough pitcher, or multiple pitchers, to hold it all.
