Heat about 1 inch of oil in a heavy-bottomed deep pot on medium heat.
Prepare a plate lined with a paper towel and set it aside.
In a large bowl whisk together the flour, sugar, baking powder, and salt until combined.
In a medium-deep bowl whisk together the eggs, milk, and vanilla extract.
Slowly combine the wet and dry mixtures to create a smooth batter with no lumps.
Transfer the batter to a squeeze bottle or batter dispenser.
When the oil has reached 375 degrees, carefully pipe the batter in strips into the hot oil. (Try not to overcrowd the pot).
- Mix until smooth: The batter should be lump-free and pour easily in a ribbon.
- Keep oil hot: Maintain the oil heat around 375°F for crisp, evenly cooked fries.
- Don’t overcrowd: Fry in small batches to keep the fries light and crispy.
- Use a squeeze bottle or piping bag: Hold about an inch above the oil for straight fries, higher for curly ones.
- Dust while warm: Powdered sugar sticks best right after frying.
