Preheat oven to 400ºF.
Blot cod filets with paper towel to absorb the moisture.
In a small mixing bowl, combine olive oil, parmesan cheese, breadcrumbs, salt, garlic powder, and pepper.
Press mixture onto both sides of the filets.
Place breaded filets on a greased baking sheet.
Bake for 18-20 minutes or until cod flakes apart with a fork.
Spread tartar sauce on buns. Add lettuce and tomatoes.
Place half of a filet on each bun to complete your sandwich.
- Let it rest: Allow the cod to rest for about 5 minutes before serving. This ensures the juiciest result.
- Use a wire rack: To ensure the cooked cod doesn’t become soggy, place them on a cool rack so the breading stays crispy.
