Line a 9x13 baking pan with parchment paper and set aside.
In a double boiler, melt the dark chocolate chips over low heat, stirring regularly. Then add half the peppermint extract.
Stir to combine and pour into prepared baking pan and spread an even layer of dark chocolate.
Refrigerate pan until chocolate has set, about 15-30 minutes.
Repeat to make a layer of white chocolate, then pour over the chilled chocolate layer.
Spread quickly to prevent the bottom layer from bleeding into the white chocolate.
Sprinkle as much crushed peppermint as desired and gently pressing them in.
Refrigerate pan until chocolate has fully set, about 15-30 minutes, then break bark into pieces.
- Feel free to use the microwave method to melt the chocolate chips instead of the double-boiler.
- Allow the chocolate to cool slightly before adding the crushed peppermint candy to prevent it from melting.
- Work quickly to pour and spread the melted chocolate before it starts to set!
